You can convert the save to PC and use the 'removeitem' command which I have had to do but items marked as Quest Objects don't actually weigh anything even if it has a number next to it. You can drop all of your other items and you will be at 0/XXX.

You can also check out the Xbox 360 Bug Report topic on Bethesda's site to see which quest those "stuck" items are tied to.
