I've been searching through numerous forums... but what are GPD's and what/how are they used??

That's pretty much exactly what a GPD is. Your Xbox 360 profile consists of multiple GPDs, which store information of all the games you have played, and anything else that needs to be saved. For example, the dashboard GPD is names FFFE07D1.GPD in your profile, and it contains your gamertag; if you were to mod your gamertag, you would change it from that GPD.
