There is the main option to change your Credits/XP/Level, and also the property values for each option below. Can anybody tell me about these:

1) If I change the AI Skill to 1 will they be really bad? Or what do I have to change it to, to be the easiest?

2) Which other ones are useful to change, just for the fun of it?

do a youtube search for mrpoopmcgee69 there are iso and jtag mods now released
and the game can be totaly rebuilt from the ground up
free cars,free parts,unicorns can be purchased ,uber fast cars monster trucks,and sooooooo much more

Im assuming since you're looking at gamesave mods that you dont have a jtag or flashed xbox for iso mods so you wouldnt be able to do the mods that discgolfer linked to.
To aswer your questions, I think the ai option is for freeplay where you can choose easy, medium, hard, etc. so you wouldnt be doing anything that isnt possible through the in game options. I've only looked through all of the options a couple of times and didnt see anything that couldnt be changed in game. Most of the fun mods are on modded consoles
